Discovering Indian Cuisine
Think of India and one of the first things that comes to mind is its diversity. A large country, its population is second only to China, its languages are numerous and every state (of which there are 28 and seven Union territories) is unique in its traditions and very importantly, its food. In fact, food from one region may actually be totally alien to a person from another region! The common thread that runs through most Indian food though, is the use of numerous spices to create flavor and aroma.
Going Vegetarian with Indian food
Dining in a typical American home or restaurant would make it seem nearly impossible to be a vegetarian. Many consider vegetarian food as something raw without any selection. Indian vegetarian food proves all of this wrong. Indian food has a very wide variety of vegetarian (even vegan) foods.
For starters, go to your local Indian restaurant to find a wide range of cooked, spiced and diverse variety of vegetarian food. Many of the Indian restaurants would prepare less spicy version if you are not used to the spices yet (you will love them as you get used to them). We would also recommend you to go through some of our vegetarian food and do not shy away from experimenting to fit your palate.

Varan (Maharastrian Dal)
Ingredients
1 cup Toor dal1 teaspoon turmeric powder1 teaspoon ghee or butter¼ teaspoon sugar or jaggery (gud) a pinch of asafetida (hing)few mustard seedssalt to taste
Garnish2 tablespoon or more cilantro (coriander) (chopped)
Preparation

Boil Toor dal with salt, sugar or jaggery (gud), hing, and turmeric. Boil until cooked well.

Heat ghee or butter in pan over medium heat. Add mustard seeds. Stop when it starts crackling.

Carefully, pour the ghee over dal.

Cook for few minutes.

Sprinkle chopped cilantro and serve with plain rice.

Moong dal can be used instead of Toor dal.
What is Jaggery?
Jaggery (Panela) is a "natural" sweetener made with the concentrated sugarcane juice. It did not have any chemicals or synthetic additives or preservatives. Jaggery (Panela) is rich in nutrition and contains lot of minerals, protein, and vitamins.
Tip:
The proportion of water and rice flour for the cover should be accurate as written above. In addition, it is advisable to sieve the flour once.
